What is mad honey?

Mad honey is honey made by bees foraging on rhododendron flowers, whose nectar contains natural compounds called grayanotoxins. Those compounds survive into the finished honey, which is why a spoonful can produce noticeable physical effects that ordinary honey cannot. It is produced mainly in the Nepalese Himalaya and the Black Sea region of Turkey, where it has been harvested and traded for centuries.

What makes mad honey different from normal honey?

One compound family: grayanotoxins. They occur naturally in the nectar and leaves of several Rhododendron species — most relevantly R. luteum and R. ponticum around the Black Sea, and high-altitude Himalayan rhododendrons in Nepal. When bees forage heavily on those flowers during a narrow bloom window, the toxins carry through into the honey.

Grayanotoxins bind to voltage-gated sodium channels in nerve and muscle cells and slow their closing. In practical terms that means the compound acts on the cardiovascular and nervous systems, which is why the reported effects are physical (warmth, tingling, lightheadedness, lowered blood pressure and heart rate) rather than purely perceptual. Where does mad honey come from?

Two regions dominate global supply:

  • Nepal. Harvested from cliff nests built by Apis laboriosa, the world's largest honey bee, at altitudes commonly cited between roughly 2,500 m and 4,000 m. Collection is done by rope-and-ladder honey-hunting teams — the Gurung communities are the best known — on spring and autumn harvests.
  • Turkey. Known locally as deli bal, produced along the Black Sea coast, particularly around Trabzon and Rize, with a longer written record in European sources than the Nepalese trade.

How long has it been used?

The oldest well-known account is Xenophon's Anabasis, describing Greek soldiers retreating through the Black Sea region in 401 BCE who ate local honey and were incapacitated for a day. Pliny and Strabo record similar episodes. In Nepal, cliff honey-hunting is a long-standing seasonal practice documented extensively in the twentieth century, with the honey used traditionally in small quantities and traded locally long before it reached export markets.

What does real mad honey look and taste like?

Typical sensory markers reported for Nepalese cliff honey: a reddish to dark amber colour, a thinner and more pourable body than most supermarket honey, a bitter or slightly astringent finish, and a distinctive catch at the back of the throat within a minute or two of tasting. Is mad honey safe?

In small quantities it is traditionally consumed by adults without incident, but grayanotoxin poisoning is a documented clinical phenomenon with a dose-dependent presentation: nausea, vomiting, sweating, dizziness, low blood pressure and slowed heart rate. Cases are generally described in the medical literature as self-limiting with supportive care, but that is not a reason to be casual.
